If ever there was a wine to counter the conventional wisdom, it must be Dal Zotto Estate Prosecco, the fun and fizzy Italian sparkling wine from the King Valley. Throw out those notions that proper bubbly must be hand made stuff, made from only the noblest of grapes. This is a classic Prosecco styling, the version which combines the varietal's aromatic quality with the exalted sapidity of its fine bubbles. To be opened for a dolce vita, anywhere and at anytime.

Australia has borrowed Prosecco from the Italians. Prosecco comes from grapes you probably never heard of (Prosecco mostly, but can also contain Verdiso and splashes of Pinot Bianco or Pinot Grigio). Cuttings have been planted in the King Valley in Victoria, where the Dal Zotto family have produced Australia's first sparkling Prosecco.
 
Brilliant straw yellow, enlivened by its perlage, strands of tiny bubbles. It's aromatic quality is fresh and rich, fruity aromas of apple and pear with a hint of citrus fruit which fades into the floral bouquet. In the mouth it is soft, yet at the same time dry thanks to its good acidity. This wine from the Dal Zotto family is austere, subtly flavoured and has a finish as dry as a wind-blown leaf.

Dandelion are a sacred accord of grower and precious vines, treating the fruit from heirloom vineyards to the finest traditions of artisanal winemaking. Carl Lindner is a dedicated custodian of old Pedro Ximénez vines, himself a true Legacy of the Barossa and lifelong paladin of fortified wine. Traditionally grown and vinified, the very rare Pedro Ximinez was first fortified by his family in 1944 and now averages thirty years of age. This wine is assembled by hand and bottled without fining or filtration. Legacy Pedro Ximenez is best enjoyed within a week of opening.

Deep amber/ ochre fading to a rusty orange. Freshly toasted pecan nuts, figs, fresh cream toffee and creme brulee notes, english breakfast tea, maple and mandarin. Sweet and rich, an aged orange peel and honey marmalade palate with candied fruit, citrus/ apricot and toffee flavours that flow to a drying finish, complex rancio, piercing intensity.

From parcels of Chambourcin grapes, hand picked off a block of vine that's surrounded by a growth of peppermint gum trees. Traditionally, Peppermint Paddock has always been difficult to cultivate and vines have struggled. Unfazed by the challenging microclime, Chambourcin has thrived. A unique hybrid grape that's known for its robustness, the Chambourcin vines of Peppermint Paddock are often left unirrigated, quite happy to perform on their own, dry grown rootstock. An astonishing amount of flavour, exquisitely balanced, a truly mesmerising effervescent red wine.

Looking out from d’Arry’s Verandah Restaurant, Peppermint Paddock slopes south down the hillside. Chester d'Arenberg thought that Chambourcin, would work well on the lean soils and replanted the site in 1989. Each batch of fruit is gently crushed to retain as many whole berries as possible. The musts are transferred to open fermenters where the skins are permanently submerged. Batches are vinified for up to a fortnight without any plunging or pumpovers. Ferments are treated to a session of foot treading and basket pressed. A portion of vintage fortified Shiraz is included in the final assemblage to add richness, to infuse the palate with plum chocolate complexity and contribute a measure of pepper spice.
 
Deep vibrant crimson purple mousse, a fine persistent bead. Freshly crushed grape nose, lifted aromas are dominated by a full range of summer pudding notes, sarsaparilla, blackcurrant leaf and boysenberry jam. Refreshing medium bodied palate, juicy raspberry and mulberry flavours. A wine of extraordinary length, rich sweet flavours and gorgeous, chewy tannins.

De Bortoli hold an extensive collection of barrel aged wines. Stocks of fortified and botrytised Semillon are drawn on from time to time to assemble into a wickedly decadent wine of rare opulence. Black Noble has most notably claimed Gold and Silver at the prestigious London International. Created by Darren De Bortoli, it is an inspiration from a 1930s wine made by Vittorio De Bortoli. Black Noble is extraordinarily unique and has been compared to the great wines of Jerez.

De Bortoli are universally acknowledged to have made a great contribution to the pantheon of Noble dessert wines. A very short vinification is applied to harvests of Semillon at rich baumes of 20 to 22, followed by fortification with a neutral grape spirit to arrest ferments. Black Noble is then clarified, a touch of brandy spirit is added for further complexity before ransfer to seasoned oak barriques which have previously aged Noble One. Alcohol 17.5%
 
Amber colour with olive green hues. Hints of toffee and coffee with raisins and mandarin peel. Unique and delicious, rich raisin and dried date fruit with hints of citrus peel, toffee and caramel flavours. Concentrated and viscous with lingering aged complexity. The perfect end to a meal, with espresso, dark chocolates, cheeses, dried fruit and nuts.

Superior single site Sparkling Chardonnay from elite rows of vine on Delamere vineyard at Pipers Brook. Fruit is whole bunch pressed, indigenous yeast fermented and treated to full malolactic, followed by a wildly extravagant four years in bottle on fine sediments and reseal with less than 2 grams of liqueur tirage sweetness. A pretty and delicate nose of fruit blossoms, white peaches, uber ripe apple and a luxurious hint of oyster shell, rich and refined stonefruit characters across the palate, ripely picked orchard flavours, warm nutty notes and brioche toastyness.

Gaze across the natural amphitheatre to the closely planted rows, these are some of the oldest vines in Pipers Brook. The fertile soils at Delamere had previously lent themselves to the successful establishment of a wonderfully diverse fruit orchard and market garden. It was the pioneering vision of Richard and Dallas Richardson that in 1981, saw the more elevated areas of the property planted to the noble cool climate cultivars of Chardonnay and Pinot Noir. A harvest of Chardonnay clones Penfold 58 and I10V1, Pinot clones D5V12, D2V5 and MV6, are hand picked off fully mature vines, vinified and treated to full malolactic, followed by extended lees maturation, dégorge and dosage.
 
Lemon straw hue, an excellent, persistent mousse. Aromatic nose of biscuit and citrus, apples and mixed red berries. Creamy stonefruit and strawberry flavours, underlying brioche characters and earthy notes, hints of truffle and toast. A wine in superb balance, Chardonnay contributes great length, Pinit Noir adds full mid palate richness, a finely structured sparkling with racy acidity and exquisitely long, fine finish.

The masculinity of Blanc de noirs, a pure Pinot Noir Cuvée, sourced off a single vineyard within the nation's most exclusive sparkling wine appellation at Pipers Brook, treated to the full luxury of old world Methode traditionelle. Limited yields from fully mature vines and an exacting, artisanal vinification are central to the quality of effervescent wines at Delamere. Pinot Noir is a specialty, yielding an effusive sparkler of sophistication and conspicuous weight of fruit, to savour as a refined aperitif or match with haute cuisine.

Delamere are one of Piper Brook's elder estates, the source to some of the nation's finest sparkling wines. Low yields of the highest quality fruit are the priority, volumes are restricted in the vineyard to intensify flavours in the grapes. Pinot Noir clones D5V12 and MV6, are selectively hand picked off dry grown vines over thirty years of age, planted in the traditional layouts as employed in Burgundy, grown to rich ironstone soils on the elevated aspects of the Delamere property at Pipers Brook. Parcels are treated to an old world style of vinication and completion of malolactic, followed by bottling under primary seal and term of maturation on lees, before disgorgement and addtion of liqueur d'expédition.
 
Medium salmon colour, persistent, creamy bead. Aromas of strawberry, morello and musk, complexed by lanolin and toast. A palate of unctuous red berry fruit flavours, complemented by earthy, mushroom characters and crisp natural acidity, before a finish of lingering fruit on a length of fine, savoury tannins. A suitable accompaniement to rabbit recipes or game terrines.
